Sichuan has a long and complex history and culture, and is known both for its opera as well as its elaborate, spicy dishes. Its unique taste comes from the Sichuan pepper, which is not related to the peppercorn. It looks like a little seed and makes the tongue numb when you taste it.

Cantonese(Guangdong) Food (Jason's Region) :

In comparison to Hunan and Sichuan foods which are spicy and hearty, Cantonese food is blander and lighter, even when it cooks similar ingredients such as tofu. This is probably because its people come from a region, Guangdong (old name is Canton) province located in the warm southern part of China. Compared with peasant-based Hunan foods, Cantonese food has many more fancy dishes, many of them are delicate dim sum dishes such as the one below.
